MOTHER’S DAY CHEESECAKE

To show your mother how much you love her, here is our recipe of a delicious strawberry and lime cheesecake for six.

Quick and easy to make, this dessert is made with a base of speculoos biscuits, a light cream cheese mousse and a strawberry glazing.

For the crust of the cheesecake, you will need:
– 200 g speculoos biscuits
– 70 g melted butter

Crush the speculoos biscuits into coarse crumbs, then add the melted butter and mix well.
In a 20 cm round mould, pack the speculoos crust tightly over the entire base. Press down so that the base is solid and place in the fridge

For the mousse, you will need:
– 400 g strawberries
– 400 g Greek-style cottage cheese
– 300 g cream cheese
– 130 g sugar
– 4 egg whites beaten stiff
– 4 gelatine sheets, about 10 g
– the juice and zest of a lime

To begin, soften the gelatine in cold water.

In a bowl, whisk together the cottage cheese with the cream cheese, half the sugar, and the juice and zest of the lime.

Using a mixer, beat the egg whites with the other half of the sugar until stiff.

Melt the gelatine in the microwave (be careful not to let it boil).

Add the gelatine to the cream cheese mixture and gently fold in the egg whites.

Remove the mould from the fridge and dice the strawberries to cover the speculoos crust. Line the edges of the mould with halved strawberries and then pour the cream to the brim, smoothing the surface well. Leave to set in the freezer for about an hour. In the meantime, make the strawberry glazing.

For the glazing, you will need:
– 3 gelatine sheets
– 150 strawberries
– 60 g sugar
– the juice of half a lime

Soak the gelatine in cold water. Then cook the strawberries, sugar and lemon juice for 5 minutes in a saucepan.

Blend the mixture and strain it if you want to remove the seeds. Then add the gelatine.

Remove the cake from the freezer and pour the glazing evenly over it. Place your mould back into the fridge and allow the glazing to set. Once your cheesecake is set, decorate it as you wish.

Now all you have to do is enjoy your cheesecake and have a great Mother’s Day with a dessert that will amaze the whole family.
